What’s in the fridge is designed to get you to think outside the box. I hate to waste food and I only buy food I like so why would I throw any of it away when it is still good? For example this week I had Prime Rib cooked perfectly just over rare with a baked potato and sauteed mushrooms on Sunday. On Monday I had left over Potato with eggs and chopped prime rib for breakfast. On Wednesday I had my annual “Wine, Women and Chocolate” party for my clients and professional women. I collect socks for The Children’s Receiving Home of Sacramento. (We donated 147 pair). We had all kinds of finger food, chips & dips and brie cheese besides the bounty of chocolate in all configurations, and of course wine and champagne. Thursday I had an annual girls lunch we call the Flamingo Beach Lunch. I took a Napa Cabbage salad with cubed smoke turkey, sliced apples, pecans and a current, caraway, mustard and olive oil dressing with rosemary baguette croutons. Saturday it started raining and I started digging in the fridge. Here is what I came up with: open face toasted rosemary bread with melted brie topped with prime rib and sauteed mushrooms and horseradish sauce! Brilliant. Yummy and the left overs were gone and I was happy! Oh yes and half a glass of Sangiovese that was also left over! Let it rain!
